Aloo cheese paratha 💙

Aloo cheese paratha is just an improvised version of the authentic aloo paratha. Aloo paratha is an Indian bread stuffed with spicy mashed potatoes which is usually consumed for lunch or dinner paired with any pickle or butter or curd. It's easy peasy and very tasty!

Here's how you can make it. For the dough : To a large bowl, take 2 cups of wheat flour, add in salt, carom seeds /ajwain, cumin seeds and mix well. Add water in batches and knead to a soft dough. Add in 1/2 spoon of cooking oil and knead continuously for 5 minutes. Cover and rest the dough for 30 minutes.
For the stuffing : To a bowl, add in boiled and mashed potatoes, finely chopped onions, green chillies and coriander leaves and ginger garlic paste. Add in spices like turmeric powder, cumin powder, coriander powder, garam masala, red chilli powder and salt. Mix everything together, next grate some processed cheese to this and give it a good mix again.
Parathas - Pinch a medium ball sized dough, roll and flatten and keep dusting it with wheat flour. Roll it a bit thin but not as thin as you would for a roti or chapati. Place the prepared cheese aloo stuffing in the centre, take the edge and start pleating as you would for a momo bringing it to the middle. Furthermore, sprinkle more wheat flour and roll it gently again slightly thicker than a roti. Be gentle else the stuffing would just pop out. Then, on a hot tawa, place the paratha and let it cook for a minute on both sides. Now brush oil or ghee on both sides and cook until brown spots appear. This tends to puff up a bit so you'll have to press slightly when it does.


Finally, relish it with butter like me or enjoy it with pickle/achaar of your choice or a cup of curd.
