Coriander rice💚

Coriander is one of the most widely used herbs.Whether it’s called coriander, cilantro or any other name, this herb is one of the most widely used herbs in a range of different countries and cuisines around the world. It is believed that the word "Coriander" is derived from the Greek word "Koris" after a certain stink bug. Interesting fact is Coriander can reach 20 inches in height.


After today's education, here on my plate I have Coriander rice. This simple dish with rich flavours from the coriander leaves and with mild spices will definitely make your day. It's a great idea for lunch boxes (hoping things go really well soon after the pandemic). I have used basmati rice here, but you can always substitute it with any rice of your choice or with bulgar wheat or quinoa.Well, who doesn't love an easy and a delicious food? We all do! Here goes the recipe :



• To make the coriander paste firstly add coriander leaves, grated coconut, green chilies, shallots, garlic cloves, and an inch ginger make into a paste by adding little water and keep aside.


• To cook coriander rice, heat 2 teaspoon of ghee/clarified butter and 3-4 teaspoon of oil.

•Splutter mustard seeds,cumin seeds, urad dal, gram dal/chana dal, thinly sliced onions, green chillies split into halves, groundnut and cook everything until the onions turn translucent and everything is cooked.

•Add salt, turmeric powder, asafoetida powder, mix well and saute for 2-3 minutes.

•Pour in the ground paste, mix well and taste the mixture for salt.Add more salt if required.

•Cover and cook for 3 minutes. Next, add in cooked rice of your choice and mix well without breaking the rice.

• Enjoy your meal 🍴🍱💚
