Arroz mexicano / Arroz a la mexicana (Mexican rice) - Vegetarian💛

I just don't want to look back and think, " I could've eaten that". Well, I'm glad I had the opportunity to cook and eat this flavourful and delicious Arroz a la Mexicana or Arroz Mexicano (Mexican rice). It's super easy and wayyyyyy to yummy and I enjoyed every tiny morsel of it.




Here's how you prepare this :


~ Firstly, heat up butter and olive oil, add in minced garlic, finely chopped onions, crushed black peppers/black pepper powder, salt and cook until the onions become slightly golden in colour.



~ Now roast one cup of long grain rice and keep stirring continuously for 2 minutes. Make sure you wash, rinse and soak the rice for 15 to 20 minutes. Strain the water from the rice before roasting them.



~ Next add in freshly prepared tomato puree (you can use store bought puree/paste too). ¡Mezcle bien! (Give it a good mix) and cook everything for 2 to 3 minutes.



~ Throw in vegetables of your choice. I've used green peas, sweet corn, green capsicum, red bell pepper, yellow bell pepper and carrots. Add in chilli flakes, mixed herbs/oregano and crush few thyme and throw it in. Mix everything together and pour two cups of water.You can also use vegetable stock instead of plain water if you have access to it. It will definitely be a better option.

Adjust salt as per your taste.



~ Next, cover and cook for 20 minutes in medium low heat.




~ Turn off the heat, let it rest for 5 minutes so that the flavours get absorbed well.


~ Mix gently once again without breaking the rice and serve it hot ♥
