Indian style scrambled tofu/Tofu bhurji ✨

Tofu is one of oldest food in the world. It is believed that over 2,000 years ago, a Chinese cook accidentally discovered it by curdling soy milk using Nigari seaweed. It takes on whatever flavours you are cooking with. This makes tofu one of the most versatile foods. It can be sweet, savory or even both. Interesting, isn't it?


So, I had Indian style scrambled tofu also known as Tofu bhurji with brown rice for dinner tonight.Tofu bhurji is Indian style scrambled tofu that I make for a quick brunch or as a side dish. Gluten-free and vegan dish. The word bhurji means scrambled in english. here I have used regular tofu, but extra firm silken tofu would also work well.In India egg bhurji and paneer bhurji are two famous recipes. They are often served in many restaurants almost all over India. They go very well with roti too but I like mine with rice. If you like tofu, then you will like this dish too. Basically, This tofu bhurji is a veganized recipe of paneer bhurji.The cottage cheese is replaced with regular tofu and rest all of the ingredients are same. As a variation, you can also add boiled peas in this recipe. The recipe is good for vegans or people who have lactose intolerance.


Here's the recipe :


1. Scramble tofu and keep aside. Heat olive oil in a pan.


2.Splutter cumin seeds and add in finely chopped ginger, garlic, onions and green chillies. Sauté until they're cooked well and the raw smell of garlic and onions fade away.


3.Add finely chopped tomatoes and fry until they soften and turn mushy.


4.Add 1 teaspoon of water to a small container and add spices like turmeric powder, cumin powder, coriander powder, red chillies powder, garam masala and salt. Give it a good mix without forming any lumps.This way you won't burn your masala and the colour will not be ruined.Pour this slurry to the pan and stir well.


5.Now add in scrambled tofu and finely chopped green capsicum to the pan. Mix everything together. Cover and cook for 3 to 5 minutes.Next, sprinkle finely chopped coriander leaves, mix well and turn off the heat. That's it, bhurji issa ready to eat! 🧡
