Mint rice / Pudina pulao💚

The name “minthe” or. "menthe"originates from Greek mythology. According to the legendary folklore, Hades’s wife Persephone turned river's nymph Minthe into herbaceous plant after she discovered that Hades is in love with her. Since Hades couldn't reverse the spell, he added beautiful smell to a newly created plant. That way, thanks to Hades, mint spreads magnificent odor when people walk across her. Mint leaves are also called as Pudina leaves.
On my plate, pudina rice/pudina pulao for lunch. This Indian dish bursting with aromatic flavours will definitely feed your tummy, body and soul 💚.

Now let's get cooking👨🍳
To a small blender add a handful of mint and coriander leaves. Also add 4 to 5 cloves garlic, 1 inch ginger, 3 to 4 green chillies, 1 small sized big onion, a half cup of grated coconut, 2 pods cardamom, 5 cloves, ½ inch cinnamon and ½ teaspoon of black pepper corns.
Blend to smooth paste adding water as required and keep aside.
In a pressure cooker heat 2 tablespoon ghee and sauté cumin seeds and 1 or 2 bay leaves until it turns aromatic.
Now, add finely chopped onions and sauté well then add finely chopped tomatoes and sauté until it turns soft and mushy.
Now add cubed potatoes, diced capsicum, chopped carrot, quarter cup of green peas and chopped beans.
Next sauté everything until it turns aromatic.
Add in the prepared masala paste and sauté well. Further, add 2 cup water and salt as per taste.
Now add 1 cup basmati rice and mix well. Make sure you wash the rice well and soak it for 20 minutes before cooking it.
Pressure cook for 2 whistles or until rice is cooked well.
Finally serve the pudina pulao / mint rice recipe with raita of your choice.
